Annatto imparts a beautiful vibrant colour which stands out on the shelf. It also slightly dries the curds to make a more concentrated, sweeter flavour. The helveticus cultures (indigenous to the Alpine region of Europe) give wonderful sweet, nutty tones with hints of an Appenzeller.
