Handcrafted from Koshi-hikari and Yukigesho rice polished down only 10%, this is very much an atypical sake that does not at all taste like your average Junmai. Using the kura's own koji strain, and the kimoto method, this boasts a much higher percentage of lactic acid. This is a funky, buttery sake that will appeal to those seeking a somewhat feral beverage. Pair with fresh pasta with lots of butter and truffles.
