Swick Pinot Gris

The fourth in a series of piquettes coming from the lauded Joe Swick. This is a sparkling rosé style made of Pinot Gris grapes, left unfitlered and unfined and without additives save a tiny bit of sulfites. Bottled at the end of its fermentation to finish as a pet-nat.

Piquette is a traditional drink of the people, dating back to antiquity and known by many names across Europe over the centuries. The idea is that after winemaking the pressed grapes haven’t given up all their sugars and flavors, so rehydrating them with water allows a winemaker to make a second, low alcohol beverage. Historically this was part of the vineyard and winery worker’s payment and a household beverage of the small vigneron, but now serves as a refreshing and ultra-sessionable drink.
