The fruit was all picked on the same day and destemmed. Co-fermented on the skins for three weeks (pumped over daily), then pressed off at dryness. The wine was briefly settled in tank before being barreled down to 225L neutral barrels / puncheons. Elevage was seven months, after which the barrels were racked together to the bottling tank (the only racking). As always - unfined, unfiltered, no SO2.
