Agave is cooked in an earthen pit oven using a mixture of mesquite and guamúchil wood
Milled using axe, mallet, and a small mechanical grinder
Fermented with natural yeasts in deep stone wells and wooden vats (tinas)
Distilled in hybrid Filipino-style stills made of a copper pot, hollow parota tree trunk, and rolled agave leaf (penca)
Rich and autumnal, with aromas of damp forest floor, sweet potato, toasted hazelnut, and hard cheese rind
47.4% ABV (ABV may vary batch to batch)
Among their wide diversity of cultivated agave, Miguel and Macurio Partida focus heavily on two subvarieties at the heart of their family taberna: Brocha (Agave angustifolia) and Ixtero Amarillo (Agave rhodacantha). This ensamble aptly represents the balance of these two species and serves as a summarization of the family’s unique production of historical mezcal in Jalisco.
